The Association Française des Maîtres Restaurateurs, the Région Grand Est and the Métropole Grand Nancy are organizing the 2024 edition of the World's French Restaurant on March 24 and 25 in Nancy!
This year, the four continents will be in the spotlight, with the World's French Restaurant label holders and their representatives (Africa, Europe, America, Asia) and Maîtres Restaurateurs from all over France.

Monday, March 25, 10:30am - 12:00pm: French gastronomy: international trends and developments
It's no coincidence that the gastronomic meal of the French was classified asanIntangible Cultural Heritage of Humanity by UNESCO in 2010. Not an easy task, then, to sum up French gastronomy in a few lines. Perhaps it's those passionate custodians of French gastronomy, the Maîtres Restaurateurs, who can best describe it? After all, the chefs at the World's French Restaurant are committed to giving people a taste of France, both within and beyond its borders.
An important part of France's national identity, French gastronomy relies on a rich terroir and sustainable agriculture to spread its influence around the world. Drawing inspiration from both the land and the world, it enables us to preserve traditions, reconcile cultures, and adapt to changes in society and new customer expectations, while leaving room for innovation to surprise again and again.
Monday March 25, 2:00 pm - 3:30 pm: Food safety
The world is going through transitions, and restaurateurs are affected by them every day. International tensions, soaring prices, sourcing, traceability, pesticides, endocrine disruptors, etc. - these are just some of the issues and dangers facing the industry. Food and nutritional security is the challenge of providing sustainable, healthy food that is accessible to all. But what can we do? How can we act? And let people know? That's what the Maîtres Restaurateurs are all about, and in particular their HESIODE Zero Waste competition. What are the roles of the single sanitary police force in charge of food safety (PSUA), fully operational since January 1, 2024?
Monday March 25, 4:00 pm to 5:30 pm: Employment in the hotel and catering industry
According to industry figures, there will be over 200,000 job vacancies in the hotel and catering sector by 2023. Despite the efforts made in the wake of the pandemic, the hospitality sector is still struggling to recruit. Of course, we'll be talking about the drudgery of the job, the gap between training and the reality of the job, and the constraints of the kitchen world. But it would be a mistake to reduce the sector to these ingredients alone. Autonomy, the nobility of products and know-how, craftsmanship, apprenticeships and rapid career development all add up. The insights and testimonials of guests from the national and international gastronomic worlds, as well as from organizations specializing in job search and training, will serve as a reminder of the significance of these professions, and provide keys to their attractiveness.
